Is possible in configuration of BPMN to set Rich Text Editor (under documentation field) without editing library code itself?

No, unfortunately, that’s currently not possible. You will have to create such a field type on your own and override the properties provider.
For the Camunda Modeler (which is using bpmn-io under the hood) there exists a script editor plugin which you might use as a starting point. Note that this is not maintained by us.
